One Pot Food: Potato and Chickpea Curry

Ingredients for 4 Persons:

  • 500 g potatoes
  • 1 can of peeled tomatoes
  • 2 small cans of chick peas
  • 500 g spinach
  • 2 spoons of vegetable oil
  • 1 onion
  • 1 carrot
  • 3 cloves of garlic
  • 2 spoons of chopped ginger
  • 4 spoons of curry powder
  • salt and pepper
  • 1 can coconut milk
  • 1 lemon or lime

Preparation:

  1. Chop onion, carrot, ginger and galic into small pieces
  2. Cut potatoes into little dices
  3. roast the onion, carrot ginger and garlic with a little bit of oil inside of the cooking pot for one to two minutes
  4. Put potatoes and curry into the pot and a little bit of salt and pepper
  5. Add the tomatos and let it boil for 10 minutes
  6. Throw the chick peas into the pot and let them cook for another 10 minutes
  7. Insert the spinach and the milk and let it boil for 5 minutes
  8. garnish the meal with some lime slices
  9. Enjoy your one pot meal 🙂
